A confectioner is a person who knows how to skillfully create sweet masterpieces. A pastry chef can prepare delicious desserts, pastries, cakes and pies. No holiday is complete without these sweet dishes. It was precisely to remember those who create chocolate, marmalade and biscuit delights that the holiday was founded - Confectioner's Day. This holiday has international significance. The ability to make sweets has come to us since ancient times, when at first honey was used in recipes, and later sugar. Confectioner's Day in Ukraine is celebrated in the spring.
Confectioner's Day 2024 — date of celebration and history of the holiday
In Ukraine, sweets appeared a long time ago, our ancestors loved to eat delicious things. For the first time, sweet dishes are mentioned in the annals of Kyivan Rus - it was honey bread, products made from yeast dough, berries that were kept in honey. Our great-grandfathers really liked various jelly. The oldest tradition that arose on the territory of our country is the baking of various gingerbreads. Our ancestors called them a little differently - "copper". Over time, the recipe of confectionery products changed, for example, rye flour was replaced with white flour. Wafers (modern waffles) have also been modified and improved over time.
"Confectionery art" developed gradually. The first culinary notes appeared in ancient times, but the real "culinary boom" took place in the Middle Ages. It was then, in the thirteenth century, that court chefs began writing and publishing cookbooks.
In the seventeenth century, the monks of the Kyiv-Pechersk Lavra used fruit jam with coffee. This sweet dessert was part of the treat when receiving guests. After jam, confectioners learned to make marmalade. According to an ancient recipe, marmalade was made from quince, apples and apricots, which contain a large amount of pectin, it is considered a natural gelatinizer. Desserts based on fruit and honey are mentioned in historical documents of Ukraine. For example, the Balabukh dynasty of confectioners opened their own production of "dry jam" in Kyiv in the seventeenth century. This dessert was quite popular among the townspeople. It resembled the desserts of Turkey, something similar to candied fruit, but with a more delicate consistency.
Confectionery is divided into several types:
Flour - cookies, cakes, cakes, muffins, waffles, crackers and others;
Sugary - caramel, chocolate, marmalade, lozenge and other candies.
Small candy shops have been working since ancient times, but the industrial revolution in confectionery began in the seventies, the beginning of the eighties of the nineteenth century. The confectionary craft has always been closed, the well-known entrepreneur K. Avdykovych-Glynska (1930s) complained that professional confectioners are in no hurry to teach the craft to new people.
Unfortunately, not all famous confectionery factories have survived to this day. Among the well-known confectionery companies that worked on the territory of Ukraine:
Odesa — Lazar Duvarjogl's factory , made oriental sweets, successfully combined new technologies and historical traditions;
Kharkiv - George Borman's factory , they created chocolate for children, with original packaging, sold their products in branded stores, which were created for the smallest customers, just like in a fairy tale;
Lviv is the "Fortuna Nova" factory , the history of this enterprise began with one bag of sugar, Klementina (the owner) cooked candies with different flavors and distributed them to buffets and candy stores.
When is confectioner's day and how is it celebrated
Since May, confectioner's day is a holiday celebrated by all those professionally engaged in confectionary business, as well as those who are just studying to become confectioners. The holiday of masters of sweet dishes is celebrated as follows:
Contests are held;
They conduct master classes in confectionery skills;
Celebrate in a team and in an informal atmosphere.
Ukraine and the world celebrate this holiday precisely on May 3, on this day of the 32nd year, the All-Union Scientific Research Institute of the Confectionery Industry was founded.
